If your idea of a diet is a donut without sprinkles you’ve come to the right place. Salads are strictly forbidden on this blog. Now I like colorful foods as much as the next girl, but only from the safety of synthetic hues. Sure you can get a natural shade of blue-green from spirulina algae, but I’m not risking dysentery over a dye.

Besides, blue-green will not suffice today; it’s the first weekend of spring and that calls for the prettiest shade of the season: robin’s egg blue. I honestly don’t care if the color was made in a chemical lab or squeezed out of my favorite jeans, there’s just something about a few droplets of blue dye in buttercream frosting that takes a donut over the top.

And when you’re flecking said donut with a paintbrush dipped in a whiskey-cocoa concoction, you’ll see how fun it is to turn dessert into an arts and crafts project. Equipment

  • 6 cavity donut pan
  • mini paint brush

Ingredients
  

Donuts

  • 1 cup all-purpose flour unbleached
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup granulated sugar
  • 1 large egg room temperature
  • 1/3 cup milk room temperature
  • 1/4 cup Greek yogurt room temperature
  • 2 Tbsp unsalted butter melted
  • 1 tsp vanilla extract pure

Robin's Egg Blue Frosting

  • 1/4 cup unsalted butter room temperature
  • 1 1/2 cups powdered sugar
  • 2 Tbsp milk
  • 3-4 drops blue gel food coloring

Whiskey Speckle

  • 1 Tbsp whiskey
  • 1 Tbsp cocoa powder

Garnish

  • 1 cup Cadbury Mini Eggs halved

Instructions
 

Donuts

  • Preheat oven to 350 degrees. Grease and flour donut pan then set aside.
  • Sift flour, baking powder, baking soda, and sugar together in a large bowl.
  • In a separate bowl, whisk egg, milk, yogurt, melted butter and vanilla until combined.
  • Carefully add wet ingredients to dry, stirring with a wooden spoon until just combined. Take care to avoid overmixing. Note: Batter will be thick.
  • Pipe batter into donut pan, evenly distributing between the six cavities.
  • Bake for 9 to 10 minutes. Donuts are done when tops spring back when pressed by a fingertip.
  • Cool donuts in pan for 3 minutes then remove to a wire rack to cool completely before adding frosting.

Robin's Egg Blue Frosting

  • Beat butter with an electric mixer until light and fluffy, approximately 3 minutes.
  • Add powdered sugar and milk then beat until combined.
  • Add gel food coloring, one drop at a time, and mix until desired shade of blue is achieved.
  • Frost donuts with buttercream.

Whiskey Speckle

  • Whisk whiskey and cocoa powder in a small bowl until smooth and lump free.
  • Dip a small paintbrush into the whiskey mixture and flick the bristles with your fingertips to create a splatter effect on the frosting. Repeat until frosting resembles a speckled robin's egg.
  • Garnish with Cadbury Mini Eggs.
