baked banana donuts

Moist, fluffy and loaded with comforting flavors, these baked donuts are made with overripe bananas and pantry staples then topped with condensed milk frosting and cocoa powder.

Ingredients

– 1 1/2 cups all-purpose flour  – 1 tsp baking powder – 1/2 tsp baking soda – 1/2 cup dark brown sugar – 1/2 tsp sea salt, fine – 3/4 tsp cinnamon – 1/4 tsp nutmeg – 1 cup overripe bananas mashed – 2 large eggs room temperature – 4 tbsp unsalted butter melted and cooled – 2 tbsp milk room temperature – 1 tsp vanilla extract

Instructions

– Preheat oven to 350 degrees. Spray donut pan with nonstick coating. – Whisk dry ingredients in a large bowl. – In a separate bowl, whisk wet ingredients. – Add wet ingredients to dry, stirring with a wooden spoon until just combined.  – Pipe batter into donut pan, filling cavities 3/4 of the way. – Bake for 11 to 12 minutes or until tops spring back when pressed with a fingertip. – Cool donuts in pan for 3 min then remove and  cool completely before  frosting. – Clean pan, coat with nonstick spray then repeat process with remaining batter.

  INGREDIENTS – 1/2 cup heavy cream    (chilled in freezer 30 minutes) – 1/4 cup sweetened condensed  milk     (chilled in freezer 30 minutes) – 1/2 tsp vanilla extract     INSTRUCTIONS – Beat chilled heavy cream with a mixer until medium peaks form, (3 to 4 min)  – Add chilled condensed milk and vanilla then continue beating until incorporated. – Cover and refrigerate until ready to use.

– Dip the top of each donut into frosting then swirl until evenly coated. – If desired, top frosting with a dusting of cocoa powder and mini chocolate chips. – Donuts taste best the day they are made but can be covered and stored up to 2 days in the refrigerator.
