apple bread with cinnamon frosting

Studded with Honeycrisp apples and slathered with cinnamon-spiced cream cheese frosting, this quick bread is a sweet way to switch up your breakfast routine.

bread Ingredients

– 2 cups all-purpose flour – 1 tsp baking powder – 1/2 tsp sea salt fine – 1 tsp ground cinnamon – 8 Tbsp unsalted butter softened – 1 cup dark brown sugar – 1/2 cup granulated sugar – 2 cups Honeycrisp apples peeled/diced – 2 large eggs room temperature – 2 tsp vanilla

bread Instructions

– Preheat oven to 350 degrees. Generously grease a 9 x 5 metal loaf pan. Set aside. – In a large mixing bowl, whisk together dry ingredients – In a separate bowl, beat butter, brown sugar and granulated sugar together for 2 minutes or until well combined. . – Beat in eggs, one at a time, – Add vanilla and beat until incorporated. – Reduce mixer speed to low then add dry ingredients to wet, mixing until combined.

– Add apples to batter, gently stirring with a spoon until evenly distributed then pour into  loaf pan. Level top with a spatula.  – Bake for 30 minutes then cover loaf with aluminum foil (to prevent overbrowning) and bake for an additional 30 to 35 minutes. Bread is done when a toothpick inserted into the center comes out clean and dry. – Cool loaf in pan for 10 minutes then turn out onto a wire rack to cool completely.

frosting Ingredients

– 1/2 cup cream cheese softened – 4 Tbsp unsalted butter softened – 1 tsp vanilla extract  – 1/2 tsp ground cinnamon – 1 1/4 cups powdered sugar – 2 Tbsp caramel sauce (optional)

frosting Instructions

– Beat cream cheese with an electric mixer until smooth and creamy – approx. 2 min. – Beat in butter. until combined. – Reduce mixer speed to low then add vanilla, cinnamon and powdered sugar. Beat on low until combined then beat on high until light and fluffy. – When bread has cooled, top with frosting. If desired swirl caramel sauce into frosting. – Frosted bread will keep covered in the refrigerator up to 5 days.
